Mango Tango Salsa

You will need:

4 14.5-oz cans petite diced tomatoes

OR

3 lb fresh tomatoes (about 9 medium) to yield 7 cups finely diced

2 cups finely chopped mango (about 2 med)

2 Tbsp freshly grated gingerroot

1 1.3-oz pkg Ball® Simple Creations® Mild Fiesta Salsa Mix

4 Ball® Wide Mouth (16 oz) Pint Glass Preserving Jars



Directions:

1.) COMBINE tomatoes, mangos and contents of package in a medium saucepan.

2.) HEAT to a boil. Reduce heat and simmer 5 minutes

3.) COOL to room temperature, about 30 minutes, before serving.

4.) LADLE salsa into clean freezer jars leaving 1/2 inch headspace. Apply lids. Label.

5.) FREEZE up to 1 year.



Makes about 4 (16 oz) pints.
