Santa Fe Salsa

You will need:

4 14.5-oz cans petite diced tomatoes

OR

3 lb fresh tomatoes (about 9 medium) to yield 7 cups finely diced

1 1.3-oz pkg Ball® Simple Creations® Mild Fiesta Salsa Mix

3 Ball® Wide Mouth (16 oz) Pint Glass Preserving Jars with Lids and Bands

1 15.25-oz can whole kernel sweet corn, drained

1 15-oz can black beans, rinsed and drained

1/2 cup chopped white onion (about 1 med)

2 chipotle peppers in adobo sauce, seeded and chopped

3 tablespoons chopped fresh cilantro

1 tablespoon adobo sauce

1 tablespoon fresh lime juice



Directions:

1.) COMBINE tomatoes and contents of package in a medium saucepan.

2.) HEAT to a boil. Reduce heat and simmer 5 minutes. Cool to room temperature, about 30 minutes. Reserve 2 cups salsa. Set aside.

3.) LADLE remaining salsa into clean jars leaving 1/2 inch headspace. Apply lids. Label. Freeze up to 1 year.

4.) COMBINE reserved salsa, corn, black beans, chipotle peppers, cilantro, adobo sauce and lime juice, stirring until well blended. Serve with tortilla chips.



Makes about 10 servings.
